Chow Time with Barb – Homemade Mayo!

Super easy recipe this time, but it is STUPID GOOD.  You have to try it.

It’s Paleo and Whole30-approved!

1 room temperature egg
2 Tbsp room temperature lemon juice
1/2 tsp ground mustard
1/2 tsp salt
1 cup extra light olive oil

Put it all in a small mason jar and blend it for about 30 seconds with an immersion blender.

That’s it!

It will keep in the fridge for a few days (though I always eat it too quickly).

Try adding other spices, etc to make it more like a dip!  You can add horseradish, dill, black pepper, garlic powder, onion powder… whatever you want!
